A selection of three marinades from Halzephron Herb Farms, based in Cornwall:-
1) Sweet William Marinade - Sharp and fresh, St Clements is especially good with chicken.
Ingredients: Orange juice, lemon juice, lemon zest, lime leaf, orange concentrate, mustard, garlic, wine vinegar, sunflower oil, salt, pepper, citric acid.
2) Eastern promise - A traditional Indian curry marinade of medium strength. Spicy, aromatic, full of Eastern promise!
Ingredients: Fresh coriander, mixed oriental spices, lime juice, garlic, red wine vinegar, tomato pureé, red wine, seasoning and citric acid.
3) Saucy Sally - Based on a Thai recipe, this hot, spicy marinade is marvellous with all meats, poultry and fish. Use to stir fry shrimps or prawns.
Ingredients: Fresh coriander, chilli, garlic, lime juice, ginger, sunflower oil, seasonings, coriander seeds, lemon grass and citric acid.
